A dense tapestry of hills embraces the villages of Soave and Monteforte d’Alpone: it is here, on the lofty slopes of Foscarino and Zoppega, that the estate’s vineyards are found.
Land of Garganega, which Roberto has gradually enriched by introducing less common grape varieties in this region, creating a production with an unmistakable style—delicate and refined aromatic notes that unfold on a supple and captivating palate.
The vines, trained using the Alberello (bush system) and Guyot system, are south-facing, planted at a density of at least 6,000 vines per hectare, and spread across 70 hectares of calcareous soil enriched with volcanic tuff.
The quality of the grapes is enhanced by the strict “vendange verte” pruning and the meticulous grape selection, resulting in wines that are more aromatic and fruit-forward, with greater complexity, body, and longevity.
The most renowned hill is Foscarino, rising northwest of Monteforte and representing the very heart of the region.
At its summit, 350 meters above sea level, lies the Capitel Foscarino vineyard—a small paradise offering breathtaking views, and on the clearest mornings, a panorama stretching across the entire Po Valley all the way to the Apennines.
Here, the microclimate is shaped by abundant sunlight, constant breezes, and significant nighttime temperature variations.
The soil consists of volcanic tuff, overlaid with clays formed from the surface weathering of volcanic rocks, while the vine roots reach down to touch the underlying basalt.
The resulting grapes are distinguished by remarkable fruitiness and plumpness, yet they also carry pronounced minerality and a vibrant acidity that boldly expresses itself.
In recent years, more than 40.000 PIWI vines (hybrid disease-resistant grape varieties) have been planted with bush vine training system on the Capitel Foscarino hill, for a greener and sustainable viticulture. These disease-resistant varieties, in fact, reduce to zero the amount of fungicides used to keep the grapes healthy, and the resulting have the same aroma and flavor characteristics as the classic varieties.
